INSPIRATION AND TERROIR


The quest began with a vision, as Mark Watkins, our master distiller, discovered a kinship between the terroir of Jalisco and our own fertile soils. This revelation birthed Agave Australis, a spirit that harnesses the rich, volcanic earth of Queensland, echoing the finest traditions of Mexico's celebrated agave spirits.


A TRIAD OF DISTINCTIVE SPIRITS


Our Silver Agave Australis reflects the terroir's vibrancy, offering a fresh and herbal profile with lemongrass and citrus notes, making it an exceptional choice for a refreshing margarita or spritz. The Rested variant, matured in ex-red wine American oak barrels, boasts a complex dance of honey and pepper, perfect for a nuanced twist on classic cocktails. And the Aged expression, a two-year sojourn in barrels, reveals a tapestry of dark chocolate and dried fruit notes, culminating in a spirit that's best enjoyed neat, celebrating its profound depth.

As we quietly released Agave Australis to the on-trade in early 2022, it quickly found a home on the backbars of some of Australia's most esteemed bars and restaurants, such as Icebergs Bar + Dining, Re., and Byrdi, to name a few. This nod from the best in the business is a testament to our spirit's quality and the innovation behind it.
