Agave Australis Rested Agave Spirit is produced from blue agave grown at altitude in the mineral rich volcanic soils of Far North Queensland. After being slow roasted in a volcanic rock pit, the spirit is distilled in copper pots and rested for six months in American oak barrels.
 
This short maturation rounds the natural agave character and introduces gentle notes of vanilla spice and warm caramel while preserving the brightness of the pit roasted agave. Smooth refined and lightly golden in colour, Rested is suited to sipping neat or over ice.
