The Rum Consortium 2026 brings six Queensland distilleries together in a limited release that celebrates the state's sugarcane heritage. Beenleigh Rum, Bundaberg Rum, Kalki Moon, Nil Desperandum, Burdekin Rum and FNQ Rum Co. each brought their own character, expertise and liquid.
The blend draws on molasses, sugarcane syrup and fresh-pressed sugarcane juice, with component rums matured for between two and twelve years. It is bottled at 40% ABV with no added sugar, and 5,280 bottles of 700ml have been produced for the 2026 release.
For Mt Uncle Distillery, this release marks a first. Our FNQ Rum Co. brand joins The Rum Consortium for the very first time, bringing a taste of Far North Queensland to a collaboration that spans the state.
Our contribution is Iridium, our five-year dark rum. It is made from North Queensland sugarcane syrup, fermented here at Walkamin and matured for five years in ex-red-wine hogsheads. It brings treacle, warm spice, caramel and vanilla, with fresh cane character and a rounded, lingering finish.
It is a celebration of where we come from, what we make and the future of Australian rum.
Appearance: Lustrous medium to deep gold with a warm amber glow.
Nose: Crème caramel, butterscotch and toffee apple, opening into maple syrup, roasted fig, date, cooked banana and mango.
Palate: Round, soft and seamless. Caramel and butterscotch lead into toffee apple, with a nostalgic note of old-school boiled lollies.
Finish: Exceptionally soft and rounded, long and composed.
Suggested serve: Neat, over ice, or long with ginger beer and a wedge of fresh lime.
Tasting notes describe aroma and flavour, not ingredients. The blend has no added sugar.

Our cellar door at Walkamin is open daily from 12pm to 5pm, closed public holidays, and walk-ins are welcome. A guided tasting is $20 a guest, with four 15ml pours you choose from across FNQ Rum Co, Agave Australis and Botanic Australis. Plan your visit before you come.
