Blue agave grown at altitude in the volcanic soils of Far North Queensland, slow roasted in a volcanic rock pit, then distilled in traditional copper pots at Mt Uncle Distillery. Agave Australis is the current range. Dirt Road Dark was the original release that paved the way for it.

What Australian agave spirit is
Agave spirit is distilled from roasted agave. Ours is made from 100 percent blue agave grown at altitude in the volcanic soils of Far North Queensland, then roasted and distilled at Walkamin on the Atherton Tablelands. The category is Australian agave spirit: agave grown here and distilled here.
How it is made
The agave is slow roasted in a pit lined with volcanic rock, which is where the natural sweetness and the earthy depth come from, then distilled in traditional copper pots. Silver carries no oak at all. Rested spends six months in American oak. Aged spends two years.
Choosing between the three
Silver is crisp and clean, with fresh agave, soft citrus and a light mineral finish. It is the one for a margarita or a paloma. Rested keeps that bright agave character and adds soft vanilla, light spice and gentle oak. Aged is the deepest of the three, with dark chocolate, caramel and dried fruit, and it is built for sipping neat or for an Old Fashioned.
Dirt Road Dark
Dirt Road Dark Agave Spirit is the original release that paved the way for Agave Australis. It is distilled from 100 percent blue agave and bottled at 45 percent. It is a final batch and it will not be made again.
